Very easy peanutbutter & jelly cookies.
I’m not much of a pastry chef..so baking anything is a rather big challenge. Why? Because of all the precise measurements etc.. I’m a free spirit.. so I always add too much of something- or too little of something else. That’s not the case with these cookies. They’re really easy to make, and they basically require just 5 ingredients and a bit of stirring.
So, here’s what you need for those cookies:
1 cup of peanutbutter ( the texture is up to you, you can use smooth,extra smooth or corse,I like a bit of texture in mine so chunky is more than fine.)
1 cup of sugar
4 tbsp of jelly (the flavour is up to you- I used cherry, with pieces of fruit, just because I wanted some texture)
2-3 tbsl of regular flour.
That’s all the ingredients. All you have to do now is mix everything together in a bowl until it’s well combined, let it chill for about 10-15 min and dollop it out onto a greaseproof baking sheet. ( use 2 spoons- it’s easier that way, or you can use an icecream scooper).
Bake them in a preheated oven (180C) for about 9-11 min) but check on them every now and then, as they burn easily. They’ll be pretty soft when done, but don’t worry they crisp up while they cool, but the centre will remain gooey 😉
