Easy chicken schnitzels!
A schnitzel to me is a classic, something my parents used to make and serve it with a fresh, crunchy coleslaw or a squeeze of lemon Vienna-style. I like them, but sometimes breaded pork seems just a bit too heavy for my liking. This time I used chicken breast to make really easy and quick chicken schnitzels with fresh thyme. I hope you like them.
All you need is:
2 large chicken breast- butterflied.
1 tsp of spicy mustard
1 cup of breadcrumbs
1 tsp of fresh thyme leafs ( you can use dried or any other herb you like-oregano, rosemary or mixed italian herbs work just as fine).
4-5 tbsp of flour
Sunflower oil to fry.
So, let’s start! What you will need to do first is tenderize your meat. How do you do that? By bashing it’s brains out with a meat-hammer. When your meat is nice and thin, season it from both sides with salt and pepper and set aside.
Prepare 3 dishes and start heating up your pan with oil in it. Put flour with some salt and pepper in 1 dish , mix it well.
Put the egg,mustard,some salt in the second dish, and whisk until well combined,
Put the breadcrumbs and thyme in the third dish.
First coat the meat in flour- do it evenly. Then dip it in egg, and lastly in breadcrumbs. Try pressing the breadcrumbs down,so they stick well. Once you’ve coated them, put them in the hot oil and the moment the bread-crust is golden on both sides- the meat is ready. Soak the excess oil on some paper towel, and you’re ready to serve 😉 see? It’s really simple and very delicious. Hope you give it a try. You can serve them as they are, with fries or new potatoes, some salade or just a wedge of lemon. The next day they make a great sandwich topping with some fresh lettuce and tomato! Enjoy!
