Easy-peasy sweet & sour in under 30 minutes! who needs takeaway?


Easy-Peasy sweet & sour chicken with rice.

I love chinese food, and we get chinese take away a lot.. Hoewever..when I found out how much salt, sugar and fat it contains..I decided to make my own version of sweet & sour, that’s low fat and doesn’t containt half a packed of sugar 😉 let’s get crackin’!

To feed 4 people:

3 chicken breast- diced

3 bell peppers- red, yellow, green- diced

1 fresh pineapple – peeled & diced ( please make sure you use fresh and not canned, it makes a heck of a difference)

1 tsp of oil

2 tsp of tomato puree

2 tbsp of tomato ketchup

1 tbsp of corn starch

1 glass of pineapple juice

Juice of half a lemon

1 tbsp of white vinegar

1 tbsp of sugar or honey

100ml of water

1cm of grated ginger

Salt to taste

2tbsp of soy sauce.

So, first thing you do is heat up your wok so it’s piping hot. Sear your chicken until slightly golden add the soy sauce and wok for a further 1 min.  Set it aside on a plate. Fry your ginger and peppers for about 2 min. return the chicken into the pan and add the pineapple chunks. Wok for 1-2 min. Mix your sauce mixture in a seaprate bowl. Mix your water, pineapple juice, corn starch, lemon juice, sugar/honey , vinegar, tomato ketchup and tomato puree, season with salt to taste. Make sure the cornstarch disolved well. Add it into the wok and wait until it comes to a boil and thickens. Simmer for 10-12 min until the chicken is fully cooked and the sauce has reduced and become syrupy. Serve with white rice- I chose basmati. 😉 here’s how it looked, hope you’ll enjoy it!
